Pol Sambol is a spicy coconut side dish and a delicious accompaniment to any of the Mama's curries.
In Sri Lanka, pol sambol is eaten with rice and curry or stringhoppers but also often sandwiched between 2 slices of buttered bread.
We have tried many pol sambols before and no one makes it better than Uncle Ravi. Here is his recipe for you to try at home.
INGREDIENTS:
200 grams of of finely shredded coconut (or fresh coconut if you can get it!)
1/4 lime
1/4 onion
1 tsp of chilli powder
1/2 tsp of paprika
1/4 tomato
1 clove of garlic
1/2 tsp of salt
HOW TO MAKE:
Step 1: Rehydrate the coconut by placing it in a bowl with 2 tablespoons of hot water and set aside
Step 2: Roughly chop tomato, onion and garlic and add to mortar and pestle along with chilli powder, paprika and salt.
Step 3: Pound until ingredients resemble a red paste.
Step 4: Add the coconut and lime juice to mortar and pestle and mix through.
Step 5: Enjoy with your favourite rice and curry dish or on buttered bread!
